GUARDA BOSCHI BOLGHERI DOC SUPERIORE

  • Vines
    • Geographical position: 40-60 m above sea level, interior, which, due to its shape, has been called the Bolgherese Amphitheatre, facing south. 
    • Soil: Medium-textured Pleocene, which tends to be sandy loam which include gravelly sediments. 
    • Age of vines: 22 years old. Date vines were planted: 1998 
    • Growing methods: Done by pruning spurred cordon  
    • Density: 8,000 plants per hectare. 
    • Production: About 7,000 kg of grapes per hectare with a yield of 65%.
  • Wine
    • Name: Guarda Boschi is the name of an area, formerly a vineyard of the Count Della Gherardesca, where vines that were planted in 1998 produce grapes to make the wine of the same name.
    • Grapes: 60% Cabernet (30% Cabernet Franc, 30% Cabernet Sauvignon ), 40% Merlot. 
    • Vinification method: Single-variety wine-making for each individual grape. 
    • Fermentation and maceration lasting for 18 days. 
    • Only yeasts present in the grapes are used. 
    • Aging: 15 months in Tronçais and Allier barrels: 1/3 new, 1/3 first fill, 1/3 second fill. 
    • Refinement: 12 months in bottle. Bottled without filtration. 
    • Production: 6,000 bottles.
  • Tasting description
    • Colour: intense and brilliant ruby red. 
    • Nose: Ample and seductive bouquet characterised by notes of small berries and plums with hints of cinnamon, liquorice and a hint of coffee. 
    • Taste: in the mouth, with a sweetness in profile, is broad, complex and is animated by a well-dissolved tannin and a pleasant balsamic freshness.
  • Pairings
    • Wine that goes well with red meats such as beef and with game. Also excellent with medium and long-aged cheeses. Also to be tried alone, as a sipping wine. 
    • Serving temperature: 16-18 ° C.

ZIZZOLO BOLGHERI DOC RED

  • Vines
    • Geographical position: 40-60 m above sea level, along the “Via Bolgherese”. 
    • Soil: Medium-textured Pleocene with the presence of shell. 
    • Age of the vines: 22 years old. Date vines were planted: 1998 
    • Growing method: Done by pruing spurred cordon 
    • Density: 6,000 plants per hectare 
    • Production: 8,000 kg of grapes per hectare with a yield of 70%.
  • Wine
    • Name: Zizzolo derives from the name of the vineyard where it is produced: “Vigna allo Zizzolo”. In the Tuscan dialect "zizzolo" stands for red date (jujube), a natural tree that grows along Mediterranean coasts. 
    • Grapes: 60% Merlot, 40% Cabernet Sauvignon 
    • Vinification method: Single variety grape vinification. Fermentation takes place in steel at a controlled temperature of 26-28 ° C. Fermentation and maceration lasting for 12 days. 
    • Aging: 6 months in second fill Allier barrles.
    • Refinement: 6-8 months in the bottle. 
    • Production: 25,000 bottles.
  • Tasting description
    • Colour: ruby red with purple reflections.
    •  Nose: aromas of wild berries, pink pepper, vegetal and violet sensations, enriched with spices, sweet tobacco and balsamic nuances. 
    • Taste: Fruity correspondence, well-made tannins harmoniously integrated into a well-structured body. Structured wine with a nice finish.
  • Pairings
    • Very versatile wine, may accompany all meat-based lunch courses. Excellent with Tuscan cured meats and bread hors d'oeuvres  or with mushrooms. Pleasant, paired with first courses with meat sauce and stuffed pasta such as tortelli and cannelloni. This wine finds its natural combination with second courses such as ossobuco or scottiglia of beef. 
    • Serving temperature: 16-18 ° C.

ZIZZOLO BOLGHERI DOC VERMENTINO

  • Vines
    • Geographical position: 40-60 m above sea level, along the “Via Bolgherese”. 
    • Soil: Medium-textured with the presence of shells. 
    • Age of the vines: 18 years old. 
    • Date vines were planted: 2002 
    • Growing methods: Guyot pruning 
    • Density: 6,000-8,000 plants per hectare 
    • Production: 10,000 kg of grapes per hectare with a yield of 65%.
  • Wine
    • Name: comes from the name of the vineyard where they are poduced: “Vigna allo Zizzolo”. In the Tuscan dialect "zizzolo" stands for red date (jujube), a natural tree that grows along Mediterranean coasts. 
    • Grapes: 100% Vermentino 
    • Vinification method: Fermentation in steel at a controlled temperature of 14-16 ° C. Fermentation lasting for 20 days. 
    • Production: 12,000 bottles.
  • Tasting description
    • Colour: straw yellow with greenish reflections. 
    • Aroma: aromas of exotic fruits, cedar and other citrus Presence of mineral nuances.
    • Taste: Pleasantly savory, fresh and fruity. Good progression and pleasant finish.
  • Pairings
    • Very versatile wine. Perfect as an aperitive, it goes well with starters and fish or vegetable first courses, and with delicate fish and white meat second courses. Try it with pizza too! 
    • Serving temperature: 10-12 ° C.
