  • Vines
    • Geographical position: 45-60 m. above sea level, within the geographic shape called the Bolgheri Amphitheatre, facing south. 
    • The soil was: Pleistocene, with a medium mixture tending to be sandy loam with gravelly sedimentation and presence of shells 
    • .Vineyard: planted in 1998 
    • Growing method: Done by spurred cordon pruning.
    • Density: 8,000 vines per hectare.
    • Production: About 7,000 kg of grapes per hectare with a yield of 60%.
  • Wine
    • Name: Foglio 38 is the land registry where our vineyards are identified 
    • Label: oil painting on jute entitled “I campi” by the artist Franco Menicagli www.francomenicagli.it 
    • Grapes: 100% Cabernet Franc 
    • Vinification method: in open French oak barrels, with manual punching down. Alcoholic fermentation and maceration lasting for 20 days. Only grape yeasts are used 
    • Aging: 18 months in the same new barrels in which fermentation took place 
    • Refinement: 18 months in bottle 
    • Production: 4000 bottles / year
  • Tasting description
    • Colour: bright ruby red, nuanced on the edge of the glass. 
    • Nose: Intense and complex with aromas of blackberry, blueberry and ripe cherry, mulberry, rose and light toasted tones. 
    • Taste: tasty and at the same time balanced mouth, with silky and elegant tannins. Long finish.
  • Pairings
    • Some examples: leg of lamb with mint, beef scottiglia, veal shank. 
    • Serving temperature: 18 ° C.

FORNACELLE TOSCANA IGT BIANCO

  • Vines
    • Geographical position: In the valley, along the Strada del Vino, via Bolgherese. 
    • Soil: sandy with marine sediment. 
    • Age of vines: 18 years old. Date vines were planted: 2002 
    • Growing method: Guyot pruning 
    • Density: 7,000 plants per hectare 
    • Production: About 7,000 kg of grapes per hectare with a yield of 65%.
  • Wine
    • Name: Obviously, the wine bears our vineyard's name. 
    • Label: oil painting on jute entitled "I campi" by the artist Franco Menicagli www.francomenicagli.it 
    • Grapes: 100% Sémillon. 
    • Vinification method: Vinification in French oak barrels. Fermentation lasting for 30 days. 
    • Aging: the wine ages in the same barrels, on the fermentation yeasts and on fine lees for about 6 months. 
    • Refinement: 6 months in the bottle 
    • Production: 4,000 bottles
  • Tasting description
    • Colour: straw yellow with golden reflections. 
    • Nose: intense and seductive fruity and floral scent, with a very slight woody nuance. 
    • Taste: the fruity note is supported by a pleasant freshness and a delicate sapidity. Long and fruity finish with nuances of toasted hazelnut.
  • Pairings
    • Excellent with shellfish and molluscs, seafood soups and in general with all fish-based dishes. Recommended with Colonnata lard and mountain or blue cheeses such as gorgonzola, roquefort or stilton. 
    • Serving temperature: 12 ° C.

ERMINIA TOSCANA IGT

    • Geographical position: 45-60 m. above sea level, inside the shape called the Bolgheri amphitheatre, facing south. 
    • Soil: medium-textured, basically sandy loam with gravelly sedimentation. 
    • Age of the vines: 22 yearsold. 
    • Date vines were planted: 1998 
    • Growing methods: Done by spurred cordon pruning 
    • Density: 7,000 vines per hectare 
    • Production: About 4,000 kg of grapes per hectare with a yield of 60%.
  • Wine
    • Name: Erminia is our daughter's name. The first vintage of this wine was in 2008, the year of her birth. 
    • Label: from a painting by the artist Fabrizio Breschi 
    • Grapes: 100% Merlot. 
    • Vinification method: Alcoholic fermentation in open barrels, maceration lasting for 20 days. Only grape yeasts are used. 
    • Aging: 18 months in the same Tronçais barrels  
    • Refinement: 18 months in the bottle. 
    • Production: 3000 bottles. Wine is produced only in the best vintages.
  • Pairings
    • Some examples: All red meat dishes, beed cut, braised or stewed wild boar. Mature cheeses. 
    • Serving temperature: 18 ° C.

VINCENZINO TOSCANA IGT WHITE

  • Vines
    • Geographical position: In the valley, along the Strada del Vino, via Bolgherese. 
    • Soil: sandy loam with mineral sediments. 
    • Age of the vines: 18 years old.
    • Date vines were planted: 2002 
    • Growing method: Guyot pruning 
    • Density: 7,000 plants per hectare 
    • Production: About 5,000 kg of grapes per hectare with a yield of 35%.
  • Wine
    • Name: The wine is dedicated to Vincenzino Billi, Stefano Billi's father.
    • Grapes: 100% Fiano 
    • Harvest: The grapes were left to dry in the vineyard until the time of harvest, which took place in mid-November. It is therefore a late harvest. 
    • Vinification method: Vinification in steel. Fermentation lasting for 30 days. 
    • Production: 3,000 bottles of 500 ml
  • Tasting description
    • Colour: pale straw yellow with golden reflections. 
    • Nose: fruity scent of peach, apricot and cedar, and floral scent of broom and hawthorn. Furthermore, some typical notes of dried grapes are perceived on the plant.
    • Taste: to the taste, the sweetness is balanced by a pleasant freshness. The fruity elements alternate and complement each other in a long finish
  • Pairings
    • Excellent with fresh pastries, pies, and cantucci desserts. To be tried with blue cheeses and paté. 
    • Serving temperature: 10 ° C.
